Herbed Pea Purée

You’re thinking there is no way your child will eat frozen peas, right? Mascarpone cheese and herbs do miraculous things to even the most rejected vegetable, and this creamy, bright purée will be sure to surprise. 

Yield: 5 servings

Add oil to a pan on medium heat. Add onions, and season with salt and pepper. Sauté onions until translucent, about 8–10 minutes. Add garlic, and cook 3 minutes. Add peas, basil, and chives. Cook until peas are hot.

Transfer mixture to a food processor fitted with a metal blade. Add mascarpone. Pulse until smooth, about 1 minute. Adjust seasoning, and serve.
