Spicy Guacamole

2 1/2 tablespoons lime juice
1/3 cup shallots, minced
2 serrano peppers, seeded and diced fine
1/3 cup cilantro, minced
3 ripe hass avocados, halved and pitted
kosher salt, to taste


Just mentioning guacamole, like bacon, has a strange ability to make people happy. The secret to great guac? Ripe avocados, and plenty of acid and salt.

Yield: 3 cups

Add lime juice, shallots, peppers, and cilantro to a medium bowl. Mix well. Scoop flesh out of avocado, and add to bowl. Discard skins. Using the back of a spoon, mash avocado until it is creamy but still has big chunks. Season with salt, and serve.
