Zucchini Lasagna

Zucchini is one of those versatile vegetables that’s available all year round. Likewise, the lasagna is a classic dish that never goes out of season. So, why not combine the two? Absolutely. We’ve got the perfect recipe for a delicious zucchini lasagna that you can enjoy anytime. Trust us, you won’t need a special occasion or season to indulge in this comforting, flavorful dish.

Ingredients

3 large zucchinis, thinly sliced lengthwise
2 cups marinara sauce
1 cup Greek yogurt
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 egg
2 tsp olive oil
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste

Instructions

Slice the zucchinis lengthwise into thin strips using a sharp knife or mandoline. The slices should be about ⅛ inch thick. You can lightly salt the zucchini strips on both sides and let them sit for 10-15 minutes. This will remove excess moisture and won’t turn the lasagna soggy. Pat them dry with paper towels.

Take a medium-sized bowl. Combine the Greek yogurt, Parmesan cheese, and egg, and give it a good mix. Season with a pinch of salt and pepper.

To Assemble the Lasagna

Preheat your oven to 375°F (190°C). Spread a thin layer of the marinara sauce at the bottom of a long baking dish. In a slightly overlapping way, layer the zucchini slices on top of the sauce. Over the zucchini layer, spread a generous layer of cheese mixture. Top it with a layer of mozzarella. Repeat the layers till you have used all the ingredients.

Bake the Lasagna

Cover the lasagna with foil and bake for 20 minutes. After 20 minutes, remove the foil and bake until the cheese is golden and bubbly. Allow the lasagna to rest for ten to fifteen minutes once baked. This will make it easier to serve. Top it with fresh basil and Parmesan before serving.
