The Ultimate French Cheese Board

Welcome to Season Two of At Home with Galavante, where we take you on a journey around the world. In this episode, Christine Drinan, the founder of Galavante, visits the French Cheese Board in Soho to explore the fascinating world of French goat cheeses with Jason Sobocinski, a well-known cheese expert. Sobocinski is a fromologist with extensive knowledge of cheese. He obtained a Master’s degree in Gastronomy from Boston University with a concentration in cheese. Currently, he runs his own cheese shop in New York City, where he sources cheese from various parts of the world and preserves the labels.

In the video, Jason presents a delightful cheese board with holiday-themed goat cheeses from various regions of France. He highlights that goat cheese has a lighter and brighter flavor, which makes it an ideal choice to balance out rich and bold holiday flavors. One of the stars of the cheese board is Delice de Poitou, an oval-shaped cheese coated in ash to keep flies away. Jason explains that the ash coating is a traditional method that enhances the rind’s appearance without significantly altering the flavor. He also emphasizes that the rind is entirely edible, which adds depth to the cheese-tasting experience.
