House Salad

Ibiza’s cuisine is heavily influenced by the Mediterranean region, highlighting seafood in particular. Juan y Andrea’s restaurant fully embraces this with a menu offering a variety of dishes, including salt-crusted fish and paella. The simplicity of their dishes impressed us, and we highly recommend trying their House salad. Here is how to prepare this incredible dish.

House Salad Recipe

Juan y Andrea’s house salad pairs prawns with mango, avocado, and spicy dressing. We hope our version brings back Ibiza memories, especially if you eat it with your toes in the sand.

Serves 8

Cook/prep time: 20 minutes

Ingredients

24 jumbo cooked shrimp, peeled, deveined, and tails removed

1 bunch of baby arugula, rinsed

2 avocados, sliced

kosher salt

Ingredients for the Mango dressing

1 mango, peeled, stone removed and cubed

2 tablespoons cider vinegar

1 jalapeño pepper, seeds removed, rinsed

1 lime, juice, and zest

small bunch of basil, finely chopped

1 clove garlic, peeled

sprig fresh mint, finely chopped

Directions

Slice avocado and rinse arugula. Arrange a handful of arugula on the bottom of each plate, top with slices of avocado and three jumbo shrimp. Sprinkle with salt. 

To make the dressing, use a fast food processor to puree the mango. Then, add the jalapeno, lime juice, zest, vinegar, and garlic, and blend until it’s smooth. Finally, add the mint and basil, and stir gently. Drizzle the dressing over your salad and enjoy.
