Grilled Peach Salad

Chicago CYJ Grilled Peach Salad

Composed salads take on a whole new meaning at Alinea. Inspired by the peach and Burrata salad, our grilled version features peppery watercress and a honey vinaigrette. There is no better place to procure fresh fruit and vegetables than straight from the farmers themselves. And there’s no better way to serve them than in a beautifully composed salad.

Serves: 4- 6

Prep time: 10-15 minutes

Cook time: 5 minutes

Ingredients:

For the Salad:

– 6 peaches, halved and brushed with melted butter
– 4 cups watercress
– 2 cups arugula
– 1 small onion, thinly sliced
– 1 cup cubed mozzarella cheese
– 1/2 cup crumbled blue cheese
– 1/4 cup toasted almonds

For the Vinaigrette:

-Juice of 2 lemons
– 2 tablespoons honey
– 1/4 cup olive oil
– Salt and pepper to taste

Directions

1. Preheat grill pan to medium-high. Prep the peaches and brush the flesh side with melted butter.
2. Grill the peaches, flesh side down, until soft and grill marks appear, about 5 minutes.
3. Whisk together the lemon juice, honey, olive oil, salt, and pepper to make the vinaigrette.
4. In a large mixing bowl, combine the watercress, arugula, onion, and cubed mozzarella. Coat with the vinaigrette.
5. Transfer to a serving platter and top with grilled peaches, crumbled blue cheese, and toasted almonds.
6. Add salt and pepper to taste.
