To prepare this dish, you need to perfectly poach lobster tail in a mixture of butter and water. The homemade tortelloni, known as zebra-striped tortelloni, is a delightful combination of flavors and is visually pleasing. When paired with the lobster and sweet pea puree, it creates a perfect blend of textures and taste. Fresh spring pea tendrils add a burst of color and freshness to the dish, while crispy Pata Negra and a sprinkle of flake salt enhance its texture and flavor.
