Some people are all about the Wiener’s Circle. Others the famed deep-dish pizza. But any true Chicagoan knows that, indisputably, there is no place in the world that does cheese fries like the Windy City.

But any true Chicagoan knows that, indisputably, there is no place in the world that does cheese fries like the Windy City. This is our “healthy” version of what inevitably becomes a late-night eat when in Chicago.  We were inspired by a recent visit to The Bandit, a farm to bar concept in the West Loop, the hottest neighborhood to eat, work (hello Google), live and play.  The West Loop has been gentrifying for the past 25 years but this neighborhood has officially boomed with the building of luxury apartments and the arrival of the Nobu hotel.  The food is pretty posh nowadays, but Bandit keeps it real with their elevated bar food.  In normal, non-pandemic times, they top tater tots with caviar.  Enough said.  

This recipe is unique to others on Galavante as this is the case where buying components pre-made yields the same return on investment as making it from scratch.  So for this recipe, we’re encouraging  you to buy it, not build it.  Of course if you want to handcut your own waffle fries, go for it, but brands like Alexia have organic versions that will save you a ton of time and deep frying in your kitchen.  

Serves 6 as an appetizer
