Super Bowl Dip

In honor of the Super Bowl this Sunday, we have the ultimate crudité and green goddess dip. We know you’re probably wondering why we would publish something that sounds so plain, but don’t worry – we’ve elevated this Galavante-style. The vegetables are blanched, roasted and crisped, and the dip is an avocado vegan confection that you will not believe has no dairy, whatsoever. This will be the dish that is sure to compete with the chicken wings this Sunday.

 

We first had this dip with Chef Kelly Janke, who has worked everywhere from The Chew to Bon Appetit.  Kelly has elevated our game here at Galavante, from the time she taught us to make easy pie crust and rhubarb galette, to this green goddess dip, that tastes rich but is actually one of the healthiest dishes you can eat.  We added to the dish by creating a cornucopia of veggies – a roasted cauliflower, air fried rainbow carrots, crisp endive and a selection of radish. You will get days of your required veggies without even missing the chips.

Serves 6

Green Goddess Dip

2 ripe or overripened avocado
4 green onions, thinly sliced
½ bunch cilantro
½ bunch basil leaves
½ cup high quality olive oil
½ cup water
1 ½ Meyer lemons
1 cup cashews, soaked overnight
Maldon sea salt or fleur du sel to taste

The goddess dip needs to be made the same day, as otherwise the avocados will brown and you’ll lose that beautiful green color.  The more ripe the avocados, the better, and this recipe is a good way to use those avocados that may be past their prime.  Also if you have a Vitamix, you’ll get the most creamy yet light as air dip.  Otherwise you can use a hand stick blender.

In your Vitamix, scoop out the flesh of the avocado and add in the green onion, cilantro including the stems, basil, olive oil and water.  Blend on medium to medium high until all the ingredients are integrated.  Drain the cashews and add to the blender and blend for another 30 seconds until the dip is creamy.  Squeeze in the Meyer lemon, and add the salt to taste.  Place a piece of saran wrap on top of the dip in the blender so there’s no air between the wrap and the Green Goddess, and chill in the refrigerator for 2-3 hours.  Place the dip in a beautiful bowl right before your guests arrive and serve with your favorite selection of veggies.
