Ingredients
4 large sweet potatoes, scrubbed
Olive oil
Kosher salt
Freshly ground black pepper
2 cups heavy cream
1/2 teaspoon ground cinnamon
2 bay leaves
Pinch freshly grated nutmeg
2 tablespoons brown sugar
3 tablespoons unsalted butter
Procedure
Begin by preheating the oven to 350˚F. Take the sweet potatoes and pierce them with a fork before drizzling them with olive oil and seasoning them with salt and pepper. Place them in a roasting pan and cook for 45 minutes until they are cooked through and tender. Once they are done, remove them from the pan and allow them to cool.
Next, heat the cream and bay leaves in a small saucepan until it is just about to simmer. Remove the bay leaves and keep the mixture warm. Once the sweet potatoes have cooled enough to handle, scoop the flesh into a large mixing bowl. Add the cinnamon, nutmeg, brown sugar, heated cream, and butter.
