Tomato Tart with Goat Cheese and Pancetta

The flavors of the tomatoes, goat cheese, and pancetta come together beautifully, and fried capers add a special touch. These tarts are easy to make and taste amazing. Here is the recipe for it.

Ingredients

  • Tomatoes
  • Salt
  • Pepper
  • Thyme
  • Olive oil
  • Pancetta
  • Dough
  • Goat cheese
  • Capers

Directions

To begin with, put the tomatoes on a sheet pan lined with parchment.  Then, season them with salt, pepper, and thyme. Drizzle with olive oil. Roast at 375˚F until soft, about 30 minutes. Next, render the pancetta in a pan on the stove until it becomes crisp, then drain it on paper towels. Cut circles out of the dough using a martini glass or a cookie cutter, and bake them in a 425˚F oven until they are puffy and golden.

Once done, remove the pastry circles from the oven and place the roasted tomatoes on top. Sprinkle with goat cheese and pancetta, then bake until everything is warm. In a small amount of olive oil, fry the capers and sprinkle them over the tarts for a final touch.
