On Mother’s Day, we all aim to please our moms with the perfect gift. However, it can be challenging to come up with a unique idea. Traditional gifts like flowers, perfume, and spa treatments have been done before, and brunch at a busy restaurant can be overwhelming. Instead, consider surprising her with breakfast in bed. Our recipe for Papaya and Mango Salad with Lime and Coconut is straightforward and easy to follow, even for those who may not be skilled in the kitchen.
Papaya and Mango Salad with Lime and Coconut Recipe
This dish is an excellent option for those who prefer lighter meals and enjoy a morning coffee. It can also serve as a light dessert if you’ve already served eggs and potatoes for the main course. Here is how to make it.
Ingredients
1/4 cup sweetened coconut
1/2 cups papaya and mango, peeled, seeded, and diced into 1’’ pieces
1/2 tablespoons fresh lime juice
Directions
To prepare this delicious salad, start by preheating the oven to 375˚F. Next, line a baking sheet with parchment and evenly spread coconut on top. Bake it for about 7-8 minutes and ensure that the coconut is turning golden brown without burning. Once done, let it cool.
Meanwhile, in a separate bowl, mix papaya, mango, and lime juice. Then, add the coconut just before serving and toss gently.
