Papaya and Mango Salad with Lime and Coconut Recipe

This dish is an excellent option for those who prefer lighter meals and enjoy a morning coffee. It can also serve as a light dessert if you’ve already served eggs and potatoes for the main course. Here is how to make it.

Ingredients

1/4 cup sweetened coconut

1/2 cups papaya and mango, peeled, seeded, and diced into 1’’ pieces

1/2 tablespoons fresh lime juice

Directions

To prepare this delicious salad, start by preheating the oven to 375˚F. Next, line a baking sheet with parchment and evenly spread coconut on top. Bake it  for about 7-8 minutes and ensure that the coconut is turning golden brown without burning. Once done, let it cool.

Meanwhile, in a separate bowl, mix papaya, mango, and lime juice. Then, add the coconut just before serving and toss gently.
