Eden Rock’s Kumquat Mojito

The whole reason we have recipes on Galavante is wanted to bring the world home to you. When you travel you create memories and there’s nothing better than recounting those with family and friends at home. Sometimes you achieve it through displaying a souvenir from Easter Island, or seashells from the Maldives. However in this case, Jean-Georges’ kumquat mojito recipe from Eden Rock in St. Barths.

Sunset Hour at Eden Rock in St. Barths

Aperitvo hour is an institution, no matter where you travel around the world.  Eden Rock’s version of the kumquat mojito has the perfect refreshing tart of the calamanci juice without being overly sugary like a traditional mojito.  That, and it’s easy recipe for even a novice mixologist.

Ingredients

3 Kumquats halved
6 leaves mint
1oz calamanci concentrate (thawed)
1 ½ oz Light Rum Havana Club
Lime wedge
Splash of soda

Directions

The beauty of this kumquat martini recipe is that it’s easy for everyone to make. When you have guests the last thing you want is to be in the kitchen the entire time. Instead, you want to spend time with your friends and family, talking about how rockstar it was to stay at Villa Rockstar in Eden Rock. If you’re headed to St. Barths Eden Rock is the place to stay, and of course if you have the coin for it, Villa Rockstar is a dream. When you see Leo in St. Barths with his super model du jour, it’s almost always at Villa Rockstar.

But now, let’s get back making cocktails. In highball glass muddle kumquat, mint, and calamanci.  Fill with ice add rum.  Pour into shaker, shake, then pour back into the glass.  Squeeze lime wedge then drop in drink. Add a splash of soda and stir.
