We went to Round Hill during the pandemic, and it was an oasis to get away from the daily grind of Zoom calls. But the theme for everyone who goes to Round Hill is to relax, and enjoy local Jamaican food and culture. This Jamaican jerk recipe will bring you right back to days on the beach and long leisurely lunches.
Ingredients
1 teaspoon ground allspice
2 teaspoons dried thyme
½ teaspoon ground cinnamon
1 small red onion, chopped
2 Scotch Bonnet peppers, seeds removed, chopped
2 tablespoons olive oil
1 1/2 teaspoons salt
2 teaspoons ground black pepper
¼ cup light brown sugar
Directions
This Jamaican jerk recipe can be used with any type of meat, seafood, vegetables and even rice. Combine all ingredients in a food processor and pulse until smooth. Liberally rub the marinade on everything from pork shoulder to chicken, then grill meats over hot charcoal and enjoy.
