The derby is an extravagant party where sports, fashion, and food come together. This event is celebrated in the South and is known for its lavishness. It could be because Kentucky is famous for bourbon, the thrill of betting, or the grand display of beautiful horses and glamorous attendees. Whatever the reason, the “greatest two minutes in sports” is a time for celebration. To pay homage to the Race of the Roses, we have created the perfect Cheese Grits recipe that celebrates the South without ruining your Sunday best.
Cheese Grits
Home cooks and professional chefs alike are passionate about grits; we find the key is to cook them slow and stir constantly. For a cocktail party, we serve them in 4oz clear cups. If you’re looking for something a bit different, substitute the chives with parsley, chervil, basil, or cilantro. A word of advice: Use a 4oz ladle to keep it neat when serving.
Yield: 15–18 tasting portions
Ingredients
4 cups chicken stock
1 cup grits (not quick-cooked)
1/4 cup heavy cream
1 cup Cacio di Roma, Tumbleweed, or sharp cheddar
2 tablespoons unsalted butter
1 tablespoon chives, minced
Directions
Bring chicken stock to a boil. Slowly add grits, whisking constantly. Reduce heat to medium-low. Cook until grits are tender, stirring occasionally with a rubber spatula so they don’t get lumpy or stick to the bottom of the pan. Shut off the heat and add cream, cheese, butter, and chives. Season with salt and serve immediately.
