Kings’ Carriage House High Tea Egg Salad Recipe

In honor of the Royal Wedding, we’ve found ourselves in an English state of mind. Hands down, Claridge’s in London serves our favorite afternoon tea. But when we’re home in NYC, Kings’ Carriage House’s high tea more than satisfies our cravings. We can’t get enough of their old school English décor and beautifully presented canapés and tea sandwiches. Their scones and sweets are worth the splurge, but we crave the savory. We love their egg salad because it has hardly any mayo and is all about the quality of the ingredients. 

About Kings’ Carriage House

Kings’ Carriage House is located in a duplex on the Upper East Side. It was opened in 1994, in what was once, as the name suggests, a carriage house. Apart from its exceptional dinner menu and high tea service, its décor really gets people talking. The owners have recreated classic European hospitality with antique furnishings and crystal chandeliers. And we can’t get enough of it. 

The Kings’ Carriage House high tea has us coming back time and time again, and we’re never left disappointed. If you don’t happen to be in New York City at the moment, here’s our egg salad recipe inspired by Kings’ Carriage House. 

Kings’ Carriage House High Tea Egg Salad Recipe 

Yield: 6 tea sandwiches

Total Time: 17 minutes

Egg Salad Ingredients 

6 slices white bread (substitute for gluten free if needed)

2-3 eggs

4 teaspoons mayonnaise

1 teaspoon mustard

Sea salt

Parsley for garnish

Directions 

Start by filling a saucepan with water and bringing it to a full boil. Gently place the eggs in the boiling water. With the pot covered, let it sit for 12 minutes. You don’t want a runny egg for these Kings’ Carriage House high tea-inspired sandwiches. When the eggs have finished boiling, peel them under cold running water. Then chop the hard boiled eggs into chunks, but not too small. 

Combine the chopped eggs, mustard, mayo, and salt in a bowl.

Cut the bread into circles using a cookie cutter. You can choose any shape you like, but round sandwiches are always classy. If you can, use a cookie cutter to make the shapes. Avoid cutting the crust.

Next, assemble the high tea sandwiches in this order: bread, egg salad, bread, and a sprig of parsley. Skewer the completed sandwiches with a cocktail fork. 

Our Egg Salad Pairs Well With

It’s no secret that egg salad is a central aspect to most high teas. They’re also great for special occasions if you dress them up a bit. You’ll even find this simple recipe on the Kings’ Carriage House high tea menu. If you’re not planning on going full out with your own high tea though, egg salad pairs well with chips or a leafy salad. You could even serve them as a side accompaniment to a creamy soup. The options really are endless with this timeless classic.
