The Perfect Crepes

All this talk of Paris makes us want to eat a crêpe. And when we think about it even more, there are so few foods that can be both savory and sweet, healthy yet decadent, and so French that it hurts. These are the tips for making this crowd-pleasing favorite

The Statue of Liberty is not the only thing that the French gave to America. Thanks to them, we also have a variant of the pancakes. Yes, you guessed that right. We are talking about the slick French Crêpes. This wrinkled crisp version of pancakes makes for the most delightful breakfast on a sunny Sunday morning. Even more delightful is the origin story of crêpes.

As meticulous as the French are about their dishes, their most famous street food was a result of an accident. In the 13th century, somewhere in the region of Brittany, a housewife accidentally dropped some leftover porridge onto the hot pan. The result of this was a thin sweet ‘crisp’ pancake. Because it was crisp, the French called it “crêpe” deriving the word from the Latin “crispa”. The best part, crêpes go with almost everything. You can add eggs, strawberries, cheese, and even Nutella. Here’s how you can make the perfect French Crêpes.

Ingredients:

1 cup all-purpose flour
2 large eggs
1 1/4 milk
2 tablespoons melted butter
1 tablespoon maple syrup or honey
1/4 teaspoon vanilla extract
Pinch of cinnamon (for extra flavor)
Salt to taste

Directions:

In a mixing bowl or blender, combine the flour, eggs, milk, melted butter, maple syrup or honey, vanilla extract, cinnamon, and a pinch of salt. Blend or whisk until smooth. Let the batter rest for about 30 minutes.

Heat a non-stick skillet or pan over medium heat. Grease the pan with a little butter. Pour a small amount of batter into the center of the pan and quickly swirl it around to spread evenly into a thin circle. Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown. Then, flip and cook for another 1-2 minutes until golden. Repeat the process and remember to adjust the heat.

Add your choice of toppings and fillings such as Nutella, sliced bananas, strawberries, blueberries, shredded coconut, chocolate chips, peanut butter, or whipped cream.
