The desserts at Alinea are part food, part performance art. One of their best pairings come in the form of strawberry cubes and gelées flavored with jasmine and basil sauces.

Prep time: 10 minutes
Chill time: 1 hour
Toss strawberries with sugar and allow them to rest for about 1 hour, stirring every 15 minutes. Puree strawberries, and the liquid they produced, with basil, lemon juice, and zest until smooth. Place in freezer to chill and process in an ice cream maker according to the manufacturers instructions.
