Folding wontons for spicy pork wonton soup might seem tricky at first, but do not worry if they are somewhat ugly looking; as you cook them, they will get a makeover and spruce up. (Just be sure the wonton is sealed well so the filling does not leak out.) If you like super spicy foods, add more Sriracha or substitute the sesame oil for hot chili oil. Here is how to prepare spicy pork wonton soup.

Ingredients
1 1/2 quarts chicken stock
3 scallions
1 (1-inch) piece of ginger, peeled
3/4 cup shiitake mushrooms, sliced thin
1 egg yolk
1/2 tablespoon soy sauce
1 teaspoon rice vinegar
1/3 lb. ground pork
1 teaspoon sesame oil
2 teaspoons Sriracha
20 wonton wrappers

Add chicken stock, two scallions, ginger, and mushrooms to a soup pot. Simmer until just 1 quart of liquid remains. Remove ginger and scallions.
Add pork, egg yolk, soy sauce, vinegar, oil, and Sriracha in a medium bowl. Mix until just combined. Place one heaping teaspoon of filling inside the wonton wrapper, keeping additional wrappers covered with Saran so they do not dry out. Brush the inside edges with water. Bring two opposite corners together to form a triangle to enclose the filling. Gently but firmly press down the edges. Fold two longer corners together to form a package. Cover the wonton with a damp paper towel and repeat the process with the remaining wrappers.
Thinly slice the remaining scallion and set aside.
Bring soup to a simmer. Gently add wontons and cook until pork is cooked for about 4 minutes. Divide soup and wontons evenly among four bowls and garnish with sliced scallion.
