Shrimp Ceviche Recipe:

Salvadorians make ceviche, one of the most popular dishes, by using a unique technique of acid-cooking fish. This involves marinating the fish in citrus juice, giving it a tangy flavor, and tendering the flesh. Then, they combine the ceviche with a savory tomato and onion salad, resulting in a perfect balance of flavors. This dish is both simple and sophisticated, reflecting the subtle style of Salvadorian cuisine.

Serves 12

Prep time: 20 minutes

Cook time: 10 minutes

Ingredients:

1 lb. peeled and deveined shrimp

4 scallions, chopped

1 cup fresh lime juice

5 vine-ripe tomatoes, seeded and diced

1 jalapeño (or Serrano) pepper, seeded and minced

Chopped fresh parsley to taste

Salt and pepper

Directions:

Start by taking a glass bowl and placing the shrimp in it. After that, pour a generous amount of lime juice over the shrimp and let it cook for around 10 minutes until the shrimp turns pink and opaque to perfection. In the meantime, take another bowl and mix diced tomatoes, scallions, and jalapeño to create a flavorsome tomato mixture.

Once the shrimp is cooked, take it out of the lime juice and cut it into small half-inch pieces. Then, add the diced shrimp to the tomato mixture and mix it well with the reserved lime juice. Finally, add a dash of cilantro and season the dish according to your taste preferences.
