This simple dish is a culinary blank canvas. Allow your kids to use their imagination and accessorize with everything from dried fruits to chocolate.

In a saucepan, combine milk, sugar and cinnamon and stir over high heat until just before the simmer. When bubbles form at the edges, add the rice, stir and reduce heat to medium low. Cook for about 1 hour, stirring often, until rice is tender. Never allow the rice to come to a boil. Remove from heat. Remove cinnamon stick and stir in beaten eggs, a little at a time, until incorporated.
Pour into serving bowls, sprinkle with ground cinnamon and serve warm.
