One of the most loved dishes in Chinese cuisine is Har Gau, which are steamed shrimp dumplings. Just like pasta is a staple in Italian feasts, dumplings are a must-have dish at any Chinese dinner. You can customize the recipe by choosing any filling that you prefer, making it a versatile dish with endless variations. Here is a guide on how to prepare it.
Yields 50 dumplings
Ingredients:
A package of frozen dumpling wrappers (defrosted at room temperature for 30 minutes)
Filling:
½ pound peeled and deveined shrimp
1/3 cup minced Chinese chives (white and green parts)
One teaspoon grated ginger, salt, and white pepper
2 tablespoons soy sauce
1 tablespoon rice wine
2 teaspoons sesame oil
Egg wash:
1 egg
A cup of water
Directions:
To prepare the dumplings, mix all the filling ingredients in a food processor until they are all blended well. After that, whisk together an egg and water to create an egg wash. Next, take a dumpling wrapper and place one tablespoon of filling in the center.
Then, to seal the dumpling, use your finger to apply the egg wash along the edges of the wrapper. After this, fold the bottom of the wrapper up and press the edges together, forming a half-moon shape. Repeat this process with the remaining wrappers and filling. Then, after assembling the dumplings, place them on a baking sheet that has been covered with plastic wrap.
You can either cook the dumplings immediately or refrigerate them for several hours. To cook, boil a large pot of water and add one-third of the dumplings. When cooking, cook them for 6-8 minutes. Further, repeat this process with the remaining dumplings.
