As we approach the holidays and the weeks of indulgence ahead, we prepare by taking care of ourselves. Inspired by the Dead Sea—the ultimate natural spa—we focus on activities like exercise, yoga, paying special attention to our skin and eating healthy to prepare us for the upcoming holiday party circuit. By the time we get to Thanksgiving, we are five pounds lighter and don’t think twice about partaking in the festivities.
Our interview with Mzia Shiman, Aesthetician Extraordinaire, inspired this spa menu. In addition to being the best aesthetician in town, Mzia is also an amazing cook. Here are the recipes she has shared with us for a delicious, yet healthy meal. Right now, we’re focusing on our grilled rosemary lamb chops recipe.
Mzia’s Grilled Rosemary Lamb Chops Recipe
Ingredients:
4 medium kosher lamb chops
4 tbsp. olive oil
5 tbsp. fresh rosemary
2 cloves of garlic, finely chopped
2 tbsp. fleur de sel
Pepper to taste
Directions:
Whoever knew that lamb chops could be so healthy? At about 300 calories for a medium piece, a deliciously prepared chop actually makes losing weight enjoyable.
Marinate lamb chops in olive oil, rosemary, fleur de sel and pepper to taste in the refrigerator for at least two hours or overnight. Bring the chops to room temperature for 15-20 minutes prior to grilling.
In an outdoor or indoor Le Creuset grill, heat until almost smoking. Use the olive oil and seasoning in the marinade to grill the chops. Sear lamb chops for about 3 minutes on one side, then turn to cook for another 3½ minutes for medium rare, longer to taste. Serve immediately.
