Grilled Corn-On-The-Cob with Garlic-Chive Butter

Ingredients

8 ears of fresh corn

1 cup (2 sticks) unsalted butter, softened

6 cloves garlic, coarsely chopped

2 tablespoons fresh chives, minced, 1 tablespoon for garnish

Kosher salt

Freshly ground black pepper

 

Directions

Start by preheating your charcoal grill to medium heat. Carefully peel back the corn husks to reveal the juicy kernels inside, ensuring to remove any pesky silks that may be attached. Before grilling, soak the ears of corn in cold water for approximately 30 minutes. This helpful step prevents the corn from burning while cooking on the grill. 

Once the corn is ready, place it on the grill and cover it for 15 to 20 minutes, allowing it to cook to perfection. In the meantime, prepare a delicious buttery blend by combining butter, garlic, and chives in a food processor. Blend these ingredients together until they form a smooth and creamy mixture, then add a pinch of salt and pepper to enhance the flavor. 

When the corn is fully cooked, remove the husks and brush each ear with the prepared buttery mixture. To add extra flavor and visual appeal, garnish with minced chives and enjoy your perfectly grilled corn!
