Croatia’s culinary scene is a treasure trove of flavors, satisfying the palates of diverse travelers. Influenced by a delightful blend of Hungarian, Turkish, Slavic, and Italian culinary traditions, each region showcases its unique gastronomic offerings. This eclectic amalgamation guarantees an extraordinary dining experience that will captivate even the most seasoned food connoisseurs.

Get ready to indulge in the remarkable world of Croatian cuisine with a tantalizing recipe for Cevapcici, a traditional dish that epitomizes the country’s rich culinary heritage and promises to transport your taste buds to new heights of delight.

Cevapcici

This combination of meatball and sausage is perfect for grilling on skewers and can be served either as an appetizer or a main course. The meat’s flavor is the star of the show, so there is no need to add too many ingredients that might overpower it. However, using ground beef with a bit of fat, such as 80 or 95 percent lean, is important.

Yield: 4 to 5 servings

Ingredients

3/4 lb ground beef

3 garlic cloves, minced

3/4 lb ground lamb

parsley, minced

kosher salt and black pepper, to taste

Directions

Soak 8 to 10 skewers in water. In a large bowl, combine all ingredients. Mix well, but do not over-knead the meat, or else it will become tough—season aggressively with salt and pepper. Roll into 1 1/2–2 inch cylinders shaped like a wine cork.

Preheat the grill to 400˚F and wipe with an oil-soaked paper towel. Place 2 to 3 cevapcici on each skewer. Grilled until cooked through, about 6 minutes. Serve with Ajvar.
