Blitva

If you’re cooking for someone who thinks vegetables (especially green ones) are pure evil, try this recipe. The starch from the potatoes acts as a sauce for the chard, and a hint of garlic and oil ties all the ingredients together. But heed our warning: don’t skimp on salt. Salt brightens potatoes just like the perfect pair of shoes turns an ordinary black dress into something magical.

Yield: 4 servings

Ingredients

3 tablespoons extra virgin olive oil

2 garlic cloves, minced

1 lb golden creamer potatoes, sliced in half

2 large bunches of Swiss chard, stems removed

kosher salt, to taste

Directions

Add one tablespoon of oil and garlic in a medium pot on medium-low heat. Sauté for 1 minute. Remove garlic and reserve. Then, add potatoes and cover with water. Bring to a boil and cook until tender. Add chard and cook for 30 seconds. Drain, reserving chard and potato. Next, add the remaining oil, garlic, potatoes, and chard to the pot. Season with salt and sauté for 2 minutes.
