Banana Ice Cream

CYJ_StLucia_BananaIceCream

Jade Mountain is an instant fix to the claustrophobic nature of city living: After a few hours relaxing into the island’s beauty, you start to feel a slow buzz of energy and, eventually, hunger, brought on by the fresh air – and complete lack of stress. But the good news is that the Zen atmosphere encourages healthy cravings, and we recommend Banana Ice cream. Here is how to make it in the comfort of your house.

Banana Ice Cream Recipe

We avoid evening sugar binges with this dish, which resembles ice cream in almost every way minus the fat, calories, and guilt. The key is to use very ripe bananas that are naturally high in sugar. Before they turn too brown, peel them, slice them, and throw them in a Ziploc bag in the freezer.

Yield: 3 servings

Ingredients

1/4 teaspoon ground cinnamon
1 tablespoon honey
2 cups peeled, frozen bananas
1 teaspoon lemon zest
1/4 cup whole milk or half and half

Directions

Add bananas, cinnamon, honey, lemon zest, and 1/4 cup milk in the bowl of a Vitamix blender or food processor—puree until smooth, about 30 seconds.

Cooking class: Jade Mountain

Jade Mountain offers two excellent options for home cooks looking for instruction: a private, one-hour demo called “Chefs on Wheels” with Executive Chef Jonathan Dearden and a group harvesting tour of an organic farm that includes an interactive class.
