Steamed Pork and Chive Dumplings

STEAMED pork dumpling

Enjoy steamed pork and chive dumplings at your next Chinese dinner. Just like pasta is to Italian feasts, dumplings are a staple for Chinese cuisine. This versatile recipe can be customized with your favorite fillings. Here is how to prepare it

Yields 50 dumplings

 

Ingredients

One package of frozen dumpling wrappers (defrosted at room temperature for 30 minutes)

Filling:

½ lb ground pork

1/3 cup Chinese chives, minced (use white and green)

One teaspoon of grated ginger, salt, and white pepper

Two tablespoons of soy sauce

One tablespoon of rice wine

Two teaspoons of sesame oil

Egg wash:

One egg

A cup of water

 

Directions

To make the dumplings, combine all the filling ingredients in a food processor and pulse until they are mixed well. Next, whisk together an egg and some water to create an egg wash. Take a dumpling wrapper and add one tablespoon of the filling mixture to the center. Dip a finger into the egg wash and use it to “paint” the edges of the wrapper. 

Bring up the bottom side of the wrapper, fold it over, and press to shape it into a half-moon that encases the filling. Repeat this process with the remaining wrappers, placing the finished dumplings on a baking sheet and covering them loosely with plastic wrap. You can cook them now or refrigerate them for up to a few hours. 

To cook, fill a large pot halfway with water and bring it to a boil. Add one-third of the dumplings and cook them for 6-8 minutes once the water returns to a boil. Repeat with the remaining dumplings. Serve with a sesame-ginger dipping sauce (recipe provided below).

 

Ginger Sauce Recipe

To prepare the ginger sauce, you will require one cup of soy sauce, three-fourth cups of Dijon mustard, one tablespoon of sesame oil, one tablespoon of finely grated ginger, half a cup of water, and one teaspoon of white pepper. 

Simply mix all these ingredients together and stir until they are well combined. Once ready, you can sprinkle some sesame seeds on top as a garnish and indulge in the mouth-watering flavors of this sauce. Bon Appétit!
