If this is your first time trying pickled herring, it may take some getting used to, but it’s a popular Scandinavian dish. Ingredients
2 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
1/2 tablespoon white wine vinegar
3 tablespoons extra virgin olive oil
1 fillet pickled herring, cut into 14-16 bite-sized pieces
1/2 loaf pumpernickel bread, crust removed, cut into 1/2’’-thick slices
3 teaspoons dill
2 slices red onion, cut paper thin
Kosher salt and black pepper, to taste
Directions
Mix mustard, vinegar, and two tablespoons of oil in a small bowl. Lay herring, skin side down, on a plate, and brush generously with sauce. Wrap with saran and refrigerate.
Preheat oven to 375˚F. Using a 2’’ round cookie cutter, cut out 20 rounds of bread. Brush both sides lightly with oil and season with salt and pepper. Place rounds on a baking sheet lined with parchment paper and bake for 8–10 minutes, until crispy.
Brush herring with sauce again and place on a pumpernickel. Sprinkle with dill and top each canapé with a slice of onion.

Wooden cutting boards are elegant and beautifully decorate a kitchen; however, when you cook and use them often, they’re not the most practical. For the hectic pace of the holiday cooking season, we prefer to use plastic – they’re lighter and, since they can be thrown in the dishwasher and doused with bleach, are more sanitary after cutting raw meat and seafood.
