Currently, he runs his own cheese shop in New York City, where he sources cheese from various parts of the world and preserves the labels.

He highlights that goat cheese has a lighter and brighter flavor, which makes it an ideal choice to balance out rich and bold holiday flavors. One of the stars of the cheese board is Delice de Poitou, an oval-shaped cheese coated in ash to keep flies away. Jason explains that the ash coating is a traditional method that enhances the rind’s appearance without significantly altering the flavor. He also emphasizes that the rind is entirely edible, which adds depth to the cheese-tasting experience.
