It could be because Kentucky is famous for bourbon, the thrill of betting, or the grand display of beautiful horses and glamorous attendees. To pay homage to the Race of the Roses, we have created the perfect Buttermilk Fried Chicken Skewers recipe that celebrates the South without ruining your Sunday best.
Buttermilk Fried Chicken Skewers
It would seem improper not to serve fried chicken at the paramount of Southern sporting events. Thanks to the skewer, this version is daintier than the classic, so your guests will be okay with spoiling their Sunday best.
Yield: 20–24 pieces
Ingredients
3 boneless, skinless chicken breasts cut into 1-inch pieces
1 tablespoon paprika
3 cups buttermilk
1/2 tablespoon garlic powder
2 1/2 cups self-rising flour
vegetable oil for frying
Kosher salt, to taste
Directions
Add chicken, buttermilk, paprika, and garlic powder in a large bowl. Mix well, cover with Saran, and refrigerate. Allow to marinate for three hours.
Add flour to a large bowl. Remove chicken from buttermilk, allowing excess to drip off. Dredge in flour, making sure each piece is completely covered with flour. Skewer chicken, placing only one piece of chicken per skewer.
Fill a medium saucepan with at least three inches of oil. Heat oil until it registers 360˚F on a candy thermometer. Add 6–8 skewers to the oil. Cook chicken until golden brown, about 5 minutes. Remove from oil, drain on a paper towel, and season with salt immediately. Repeat the process with the remaining chicken and serve warm.
