Ingredients
Pastry dough
1 (15-ounce) can of pumpkin
2 large eggs, beaten
1 cup heavy cream
1/3 cup sour cream
2/3 cup light brown sugar, firmly packed
1/4 cup Bourbon
2 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
Procedure
First, preheat your oven to 375°F, ensuring the rack is in the middle. Line your pie dough with foil and fill it with weights or dried beans. This helps the pie crust retain its shape during the baking process. Bake until the edges turn a lovely golden brown, which should take about 20 minutes.
Next, remove the weights and foil and continue baking until the entire crust has turned golden in color. You want to avoid overcooking the crust, as it can affect the overall texture and taste of the pie. This step should only take an additional 10 minutes or so.
Once your crust is done, remove the pie from the oven and let it cool completely. Meanwhile, in a separate bowl, combine your pumpkin, heavy cream, sour cream, eggs, sugar, Bourbon, cinnamon, ginger, and salt. Whisk everything together until all the ingredients are well combined.
Pour this mixture into the cooled pie shell and bake it for approximately 45 minutes. You will know it’s done when the edges are set, but the center is still slightly loose. Be sure to let the pie cool completely before serving with whipped cream.
