Overview
You know you’ve reached the top of your culinary game when you invent a cuisine. Jade Mountain’s Chef Allen Susser took the lush and exotic ingredients growing right outside his kitchen and created “Jade Cuisine.” While the menu of a master chef is usually out of reach, we reconstructed a few of Chef Susser’s blissful dishes in this issue of Galavante. However, we wouldn’t blame you if you wanted to go to Jade Mountain yourself and sample the real deal. Here are our adapted recipes, inspired by recipes around the web. Next, we’ll focus on our recipe for mashed plantains:
Mashed Plantains Recipe:
Plantains are often fried in the Caribbean, but they are just as tasty when mashed with vanilla and brown sugar.
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
4 very ripe plantains
1 1/2 cups water
2 tablespoons unsalted butter
1 vanilla bean, scraped
1/4 cup light brown sugar
Kosher salt
Freshly ground black pepper
Directions:
In a deep skillet, add plantains, water, butter, vanilla, and sugar. Bring to a simmer and cook until plantains are tender, about 20 minutes. Transfer plantains to a bowl using a slotted spoon and mash with a fork. Season to taste with salt and pepper. Serve the mashed plantains warm.
