Overview
Helmed by Chef Dave Beran, the genius behind the beautiful French bistro in Santa Monica, pasjoli, and the Michelin-starred Dialogue (which unfortunately closed during COVID), this new Santa Monica spot is his most ambitious yet. Seline is a restaurant where flavors get weird (in the best way) and every dish feels like an edible work of art.
The restaurant is designed in its layout to intentionally remove the division between the kitchen and the dining room — to create an atmosphere where chef and guests are one. Everything from the service style to the plateware is designed to create a shared dining experience — even if you came to Seline to dine solo.
Food + Beverage
The 15 to 18-course menu at Seline is a rollercoaster of textures, temperatures, and flavors that shouldn’t work together, but absolutely do. The menu is a combination of meats, seafoods, and vegetables, all inspired by what Southern California has to offer. So, you’ll go from from sipping on an earthy, umami-packed mushroom tea; to trying the freshest geoduck, mussels, and oysters; to braving the “obvious” and “less obvious” parts of the squab (breast, leg, and bones are “obvious,” and liver, skin and heart are “less obvious”). And then there’s the freeze-dried chestnut ice cream, caviar and coffee, frozen mustard & passion fruit — in a word, an experience.
Of course, you can (and should) pair all of that with wine from various regions around the world, or a non-alcoholic selected options (both house-made and curated beverages). Everything is specifically intended to go hand-in-hand with your menu progression — all 2.5 to 3-hours of it.
Atmosphere
Walking into Seline feels like stepping into another dimension—one where time slows down, and the only thing that matters is what’s on your plate. The lighting is moody — so dim you’ll find yourself instinctively lowering your voice. The interior is sleek, dramatic, and just the right amount of unsettling. Think of it as an underground lair, where fine dining meets mystery movie aesthetics.

Seline isn’t cheap, but you didn’t come here looking for a budget meal. Expect to drop $295 per person for the full experience (more if you go big on the wine pairing).
