If you’re planning on vacationing in Europe in 2025, you know better than to follow an itinerary based on crowded tourist attractions. Instead, map your trip according to the most recent luxury hotel openings. While there are dozens of new upscale properties launching this year, we have selected five in three different countries. Consider this an opulent mini-tour of Western Europe filled with pools, spas, fancy decors, amazing views, and loads of historical charm. Ready, set, indulge.
Rox Resort, Denmark
Denmark is probably not on your list of must-try seaside vacation destinations, but it should be. Because when Rox Resort, located on the Baltic Sea, opens on November 1, 2025, you’ll forget all about the tropics. Northern Europe is where it’s at.
While the stretch of coast where Rox Resort sits is undeniably beautiful, the property is also less than 40 minutes from Copenhagen. This means you can combine cultural outings and shopping sprees in the city, with your well-earned time by the water, all in the same day.
Architecture and interior design studio Spik worked its magic on this beautiful property. The dark wooden floors and the brass finishes make the space feel intimate, warm, and inviting. The rattan light fixtures, velvet upholsteries, and floral textiles reinforce the cozy feeling. It’s like great-grandma’s house if she had extremely good taste and a trendy Insta account. The gorgeous decor is firmly anchored in the 1920s and 1930s. You’ll feel transported as soon as you step in.
The resort has 158 rooms, two restaurants, and five bars. The Dirty Sichuan, a steakhouse mixing British and Sichuan cuisine, is the main dining venue. The Dumpling Bar, located poolside, provides a more casual food option. The bars spread across the property — from the rooftop pool to the outdoor terrace, the Fire Room, and the lobby. You’ll never be left wanting for a cocktail.
Perhaps the most appealing part of Rox Resort are its wellness and fitness offerings. There’s a full-service spa and three heated pools, so you can swim year-round. For those who prefer to stay active, there’s a fitness club, two padel courts, a soccer field, and even a golf simulator. You can sweat all your meals and drinks away without ever leaving the premises.
Les Hauts de Sancerre, France
Sancerre is a hilltop village of fewer than 2,000 inhabitants, located in the heart of the Loire Valley. Despite sounding modest, Sancerre is home to a grand castle and an immense, world-renowned wine estate. Starting this summer, you’ll be able to sleep in this castle, take long walks on this very estate, and enjoy local wine at its chef’s table. Can this place be any more French?
On July 1, 2025, Les Hauts de Sancerre will open its first eight rooms, chef’s table, fitness room, and spa. When completed in 2027, the five-star property will offer 27 rooms spread over four buildings, a Michelin-starred restaurant, and a pool. But it’s good to get in early and test out the waters – and the wines.
While the castle is ornate on the outside, inside it’s an entirely different story. The interior decor is incredibly minimalist with neutral-colored walls and angular, modern furniture throughout. It’s very chic and totally unexpected.
For a well-rounded stay, enjoy a facial or massage at the spa, rent an electric bike to visit the surroundings, or book a wine tasting on site. Make sure you have the five-course dinner at the chef’s table – Top Chef winner Arnaud Munster is in charge.
Les Haye en Sologne, France
Another day, another castle – that’s what traveling around France looks like. And more precisely, it’s what traveling around the Loire Valley, AKA Castle Central, looks like.
Located about two hours away from the previous property, Les Haye en Sologne is a more modest castle hotel that opened in November 2024. The four-star property has one big advantage over other hotels in the area: it’s less than five miles away from Chambord and Cheverny, the most-visited attractions in the area. You can even get there by taking a very bucolic bike ride along the Loire River.
The 19th-century castle is set on 445 acres of woodland where deer roam freely, so you don’t have to deal with any urban noise. And because there are only 19 rooms and suites in the hotel, you won’t be bothered by crowds of tourists either. Think of it as a very elegant sanctuary with a pool and a tennis court, where you take forest walks, and even partake in an open-air movie night under 500-year-old oak trees.
Inside, the decor is tasteful and colorful with jewel tones throughout, velvet textiles, and a balanced mix of contemporary and antique furniture. The space feels cozy and intimate – the perfect combo for those who want a low-key visit to the region.
Les Haye en Sologne serves breakfast, brunch, lunch, afternoon snack, all-day beverages, and dinner on site in a variety of venues. (Expect croissants, French toasts, and crêpes galore). The main restaurant Le Cyprès Chauve serves refined cuisine in a beautiful conservatory. That said, if you prefer something a little closer to nature, you can request a picnic and enjoy your food in the outdoors.
Althoff Villa Belrose, France
It took three years, but it was worth it: St. Tropez’s Althoff Villa Belrose is finally done with its modernization. The work was unveiled on the season’s opening day on April 15, 2025. All 39 rooms in the five-star, hilltop property are looking so stylish and deluxe they’re serving five-star main character energy.
There are eight types of rooms and suites at this luxury property, all featuring sophisticated, fashionable decor and Mediterranean hues. Every single one of the accommodations offers guests views on the sea or the garden. However, nothing beats the vistas from the Suite Belrose Panoramic View, the biggest and most luxurious suite available.
The on-site restaurant, Le Belrose, is an institution in these parts, so you’d be remiss to pass on it. If the weather allows, book a table on the terrace and enjoy the Provencal specialties and the extraordinary views. Of course, that’s not the only place to find sustenance — there’s also gourmet French cuisine at the Pool Restaurant, and the rosé flows freely at the bar (which is sustenance too).
The luxury hotel has two pools where to cool off, one fitness room for the exercise fanatics, and a spa with a range of treatments. If that’s not enough to keep you satisfied, the concierge can plan a fun day of golfing, sailing, or hiking for you. Just ask.
Sandblu, Santorini
A trip to Europe without a detour in Greece is simply a crime against the laws of vacationing. If you don’t want to lose street cred among your traveler friends, plan a trip to Santorini, where Sandblu opened on April 17, 2025.
Located on the side of a cliff in the eastern part of the island, Sandblu comprises 66 rooms, suites, and villas. They are all decorated in a simple Greek aesthetic, with natural woods, and an abundance of white and blue hues.
There are six restaurants on site, all of them serving predominantly Greek and Mediterranean food, wine, spirits, and pastries. Baklava-eating and Vinsanto-wine-drinking count as cultural experiences, right?
A large spa, with multiple treatment rooms, a sauna, and an indoor pool offers unique facials and massages. Ever heard of cryo facials or celestial black diamond facials? Sandblu will fill you in.
