This one is from the archives of 2019, but we found it and had to share. We first met the talented Chef Pato Fuentes in San Sebastian when we took his class at MIMO. MIMO is the best cooking school in San Sebastian. It’s located at the exquisite Maria Cristina Hotel, where we based all of our food excursions, including food tours. We took two classes with Pato and learned to vacuum seal, sous vide, and create a Basque feast. We also learned about pintxos, the signature bites of San Sebastian on toothpicks.

When Pato came to New York, we had him teach us how to make a traditional Basque pintxo of clams and cod. We revisit the sous vide technique that we learned at the cooking school in San Sebastian. There is nothing like meeting up with the extraordinary people we run across in the world and hosting them in New York.
