Nicola Easterby, more commonly known as Polkadot Passport, is a tastemaker if we’ve ever seen one. This Australian-born globetrotter has always had a love for travel and photography. When met with the decision of choosing university or pursuing photography and travel full-time, the latter choice landed her at 50+ countries traveled, a 250K following, and the expertise to help fellow wanderlusters make the most of their own adventures (and recipes to match). Below, Nicola shares travel tips and favorites to keep in your back pocket, when booking your next flight.

What’s one underrated destination you think more travelers should have on their radar — and why?

Cyprus. I feel like this Mediterranean gem flies under the radar, but it genuinely surprised me. It’s got everything from ancient ruins, charming mountain villages, beautiful beaches, and the most delicious mezze spreads in the world. Plus, the people there were so friendly. It’s one of those places that feels both authentic and affordable, which is getting rarer these days.

With so many trips under your belt, what’s something you always pack that makes travel smoother, especially for long-haul or multi-stop adventures?

Noise-cancelling headphones. I can’t go on a long-haul flight without them. Being able to drown out all the noise of a plane allows me to stay in my own little bubble during a flight, and makes the travel experience a whole lot more peaceful.

From travel to food content, a lot of your experiences fall under the umbrella of hospitality. What key hospitality factors do you look for that qualify a place as worth recommending to your followers?

For me, it comes down to three things: genuine warmth, attention to detail, and how a place makes you feel. I don’t care if it’s a luxury hotel or a hole-in-the-wall noodle bar—if the people are kind, the experience feels thoughtful, and it leaves me with a story I want to tell, that’s what makes it recommendation-worthy.

What is your favorite meal you’ve had abroad thus far in 2025, and why?

Without a doubt—Da Terra in London. I went for my birthday, and it was honestly one of the most unforgettable dining experiences I’ve ever had. The restaurant is Brazilian-inspired with two Michelin stars, but what makes it so special is how intimate and thoughtful the whole experience feels. You’re seated in a dining room that overlooks this cozy open kitchen, and it almost feels like you’re in someone’s home, watching them cook for you. Every course was a piece of art—both visually and in terms of flavor. I’ve eaten at a lot of Michelin-starred spots over the years, but I’ve never had food quite like this before.

What destination is next on your bucket list?

Greenland. It’s been sitting on my dream list for ages (ever since watching The Secret Life of Walter Mitty). There is just something about the raw, untouched nature there that really draws me in. I know the expression is overused, but it is one of the few places that still feels truly off the beaten path.
