Auberge has done it again. The hospitality brand opened a new property in Florence, Italy on March 2, 2025 and it already has two Michelin Keys. To say they wasted no time would be an understatement. But, of course, we couldn’t expect anything less from the people behind Wildflower Farms in the Hudson Valley and Auberge du Soleil in Napa Valley. They know how to create luxury hotels like very few others do. This time around, they chose to turn a 1868 boarding school into a dream property complete with original frescoes, coffered wood ceilings, and killer views of the Tuscan capital.
Collegio alla Querce
Auberge operates 31 luxury properties, and Collegio alla Querce is their first (and only, so far) hotel in Italy. Of course, for their foray into this new country, they chose a remarkable location: Collegio alla Querce sits on a lush hilltop just 15 minutes by car from the center of Florence.

Originally a Renaissance-era villa and then a boarding school, Collegio alla Querce is now home to 83 rooms, including 28 suites and six signature suites. Much like the carefully manicured grounds filled with oak and olive trees, the interior decor is elegant and deceptively simple. In fact, it’s the epitome of quiet luxury. Neutral colors, hardwood floors, and tasteful modern furnishings mixed with traditional architectural and design details make for an extremely sophisticated atmosphere. The Grand Suites, with their hand-painted murals have won our hearts, but the seven-room Palazzo Moderno, with its pool and views of the Duomo is close to perfection.
Amenities at Collegio alla Querce

There are five restaurants and bars on site, including Gamella, where you can enjoy Tuscan cuisine; Conservatorio, a glass-enclosed venue for wine and pastries; and Cafe Focolare for those who prefer al fresco drinks and snacks.
Like any hotel of this caliber, Collegio alla Querce is home to a Technogym-equipped fitness center, an outdoor pool, and a spa. The spa offers treatments based on ingredients found on the property and in the region, such as grape vines, olives, and garden herbs. Fitness classes, as well as pilates and yoga sessions are on offer weekly if you want to sweat all the pasta and focaccia out of your system.
Upcoming Auberge properties
Despite all its success, Auberge is not resting on its laurels. The brand plans to open a lot more upscale properties in the next few years and we’re here for it. In 2026, Auberge will open the Knox Hotel & Residences in Dallas, Texas, and Cambridge House in London, England. In 2027, it’s four more Auberge properties that are scheduled to open: two in Florida, one in Texas, and one in Puerto Rico.
