No matter where you travel around the world, there’s something about summer in the Hamptons that just feels like home. From the barbecues and idyllic days on the beach, to the runs to pay $20 for a pint of strawberries at Round Swamp Farm, this is where life is good every day. But also, every year, the Hamptons keep it interesting by rolling out a wave of new restaurants that will grace the East End this summer.

1. Mary Lou’s

The Palm Beach hit is coming to Montauk. Mary Lou’s Montauk is set to open this summer at 474 West Lake Drive (previous N’AMO location), bringing more coastal dining and vibrant nightlife to the Hamptons. And, it’s rumored to be opening as early as the first week of June.

2. Bagatelle

Bagatelle’s newest 13th location is going to be Montauk, and it’s going to now. Yes, you read that right. Bagatelle Montauk is opening this June. And honestly, the French Riviera-inspired brand will fit in perfectly in Montauk’s historic Gosman’s Dock. We’re ready to see some Bagatelle brunches in the East End.

3. Gigi’s Montauk

Gurney’s Montauk Resort and Seawater Spa is a Hamptons staple. The resort, best known for its bottle-service beachside, has a new project: their first ever flagship restaurant, Gigi’s Montauk. The resort closed for renovations at the beginning of the winter. But they plan to open the restaurant right in time for your summer seaside vacation. Gigi’s will take over the Scarpetta Beach space and offer a Mediterranean American fusion focused on seasonality. While the decor and menu specifics are still a mystery, the outdoor seating plus Gurney’s reputation makes this a spot to keep on your radar.

4. Dune Cafe

Yes, there’s more. Gurney’s Montauk Resort’s latest addition will be the Dune Cafe, which is set to open mid-June. You might as well post up there for every brunch, breakfast, and cocktail.

5. Palma Day Club

You don’t have to go to Ibiza for the poolside party vibes anymore. Palma Day Club is set to open at the Montauk Beach House on May 24th. We’re thinking we’ll start the summer with a craft cocktail, and a curated DJ lineup.

6. Swifty’s 

No, we’re not referencing the superstar Taylor Swift’s fanbase; there is another Swifty equally relevant to the NYC socialites of the early 2000s. Swifty’s used to be a go-to supper club on the Upper East Side from 1999 to 2016. They’ve hosted fashion designers, astronauts, and the upper crust.

Luckily, the hospitality industry saw the potential for a revival after regulars showed their disappointment at its closure. The Colony Hotel in Palm Beach proposed a reopening, and it was an instant success. All this is to say, you don’t need to book a flight to Florida to get your hands on the American classics. Swifty’s is opening in East Hampton this summer. The old Sartiano’s space in The Hedges Inn will house the new Swifty’s, and, in usual Hampton fashion, be filled with seasonal florals and linens. The signatures haven’t changed; you can expect Jumbo Lump Maryland Crab Cakes and Chicken Curry Salad. We’re also willing to bet a celebrity sighting might be in your future.

7. North Fork TV Festival

Anniversaries call for big celebrations, and the North Fork TV Festival is going strong for its 10th year. Emerging film stars have the opportunity to showcase their talents through an Independent TV Pilot & Script Competition, screenings, and talks about industry growth. The festival emphasizes the need for more inclusion in film and reclaims power from the few industry makers who decide what is relevant. In other words, you could potentially see a new film star in the making during an independent pilot episode viewing that would have otherwise stayed undiscovered. As for what’s new, this year debuts The Actor’s Studio— a VIP experience that will place you in a hyper-intimate setting with six one-on-one conversations where you can ask successful industry leaders your most pressing questions.

8. Sea Salt at Sole East Backyard

Sea Salt is where you should go for Mediterranean-inspired breakfast, lunch and dinner, starting this weekend. As of May 22, led by the former Duryea’s chef Melissa O’Donnell, Sea Salt will be open for business at Sole East.

9. OFFSHORE Montauk

If you book the same Hamptons hotel every summer and want something new, OFFSHORE Montauk may be that place. The hotel debuts this summer, and its location is central to all the Hamptons necessities. OFFSHORE Montauk is on the oceanfront, steps away from the beach, and near all the restaurants and shops in town, so a car ride isn’t necessary. Only forty-three accommodations make the space feel intimate, but that doesn’t mean there is a shortage of room types at OFFSHORE. You can choose between Oceanfront or Beachfront Suites, Double Queen Bunks, One-Bedroom Spa Suite Condos, and a private Two Bedroom Cottage. After lounging, the spa is where you can relax, whether doing a cold plunge or toasting in the infrared sauna. 

10. Crazy Pizza East Hampton

You’ve love Crazy Pizza in the city, so why not on vacation, too? If you were worried about getting your Pizza fix, fear not. Crazy Pizza made it to East Hampton. This June, Majestas and Altamarea Group are bringing Italy to you with hand-tossed, super-thin crust pizzas and Italian classics. You know you’re getting a fresh product, too, because the ingredients are imported. It’s not just about the food; you can expect pizza spinning and DJ sets for a lively, family-friendly outing. 

11. Minnow at The Galley Ho 

You can expect seafood and sustainability from Minnow at The Galley Ho. The beauty of this seafood joint is that you’re not just by the water but have a front-row seat to where your food is coming from. The seafood is line-caught in Cutchogue Harbor, and the other ingredients are locally sourced. If you’re unsure what to order, Minnow at The Galley Ho makes it easy because your menu is based on the day’s catch. As for the sustainable practices this summer, Andrea Tese will source her fish from her own pond traps, an eco-friendly way to eliminate bycatch.

12. Wayan & Ma·dé Out East at EHP Resort & Marina

Wayan & Ma·dé Out East is returning to The Hamptons for the summer season. Led by Cédric and Ochi Vongerichten, this beloved French-Indonesian culinary experience will run from May 22 to August 31, 2025. This marks the third summer residency for Wayan & Ma·dé in the Hamptons, following last year’s pop-up at Buttero.

13. Camp Rubirosa

In the former location of The Laundry, will come a seasonal pop-up from the iconic Rubirosa in NYC. Yes, they’re bringing their Italian-American classics to East Hampton for the first time. Welcome, Camp Rubirosa — a blend of summer camp nostalgia and Italian countryside charm. As early as Memorial Day weekend, right through to mid-September, you can stop by for signature Tie-Dye Pizza, house-made pastas, and fresh seafood.

14. Fēniks

Debuting in the old Le Chef location, Fēniks is the brainchild of the Plaza Cafe’s team (photo above is a dish from Plaza Cafe — the Fēniks dishes are still pretty hush-hush). This will be an elevated take on local seafood classics. Opening mid-June n Southampton Village, led by Chef Douglas Gulija and Skip Norsic, Fēniks will include a Chef’s Counter with an eight-course tasting menu, an à la carte menu, and a cocktail lounge.

15. Namiro Sushi

Namiro Sushi is making its debut in Southampton Village, bringing a sleek, high-energy dining experience to 76C Jobs Lane. The restaurant officially opens to the public on May 21, 2025. They already had an exclusive ribbon-cutting ceremony and VIP cocktail preview on May 17 — so now, they’re good to go, just in time for Memorial Day weekend.

16. Sagaponack General Store

And last, but certainly not least, the beloved Sagaponack General Store is finally re-opening after a major renovation. Originally established in 1878, the store has been closed since April 2020. Now, they have expanded the layout, built some natural light-filled interiors, and a revamped post office. Just like in the pre-COVID days, the Sagaponack General Store will sell penny candy, grab-and-go meals, fresh produce, artisanal cheeses, and pretty much all the gourmet provisions you and your entourage might crave.
