Wagyu Beef Recipe

Wagyu, Rosti and Onion Rings

3 large potatoes
2 eggs
100gm butter
parsley flat leaf
salt and pepper


Onion rings
1 onion
60gm corn flour
60gm plain flour
soda water (ice cold)
salt and pepper
1/2 tsp baking powder




Peel and cook potatoes until your knife just slides through. Cool them down. Once cool, grate the potato. Mix eggs and butter together and add the grated potato. Mould into flat round discs and cook in hot butter in a fry pan. Cook each side for 2 minutes or until golden brown.

Season each side of the Wagyu fillet and sear both sides in a hot pan. Place in moderate oven for approximately 4 minutes or until your desired doneness.

Onion rings
Mix together both flours and a pinch of salt and pepper. Slowly add in the soda water, just enough to combine into a batter. Don’t overwork the batter. Dust onion rings in flour and dip into the batter; cook in hot oil (180°C).
