In our book, Maitake—which also go by the much more poetic name "hen of the woods"—are mushroom royalty. Their firm, meaty texture and nutty taste intensify when cooked and transform into crunchy, buttery bites of joy. Roast them with oil and salt and serve atop a mound of arugula, parmesan shavings, and lemon juice; sauté them in butter and garlic and add to handmade pasta; or grill, sprinkle with parsley, and pair with any type of fish or chicken.
