Belgian Mayonnaise Recipe

Get ready for the best Belgian mayonnaise recipe you’ve ever tasted. And the best part? It’s easy to make. Belgian mayonnaise is different to the standard plain mayonnaise you can make at home or buy in the store as it contains a higher proportion of egg yolk and oil. It is not only a delicious and creamy mayonnaise, but it is quick and easy to make with little equipment and just a few basic ingredients. What’s even better is that Belgian Mayonnaise is a versatile dish that can be used to accompany meat, fish or crispy French fries.

Ingredients needed for Belgian mayonnaise

  • 2 egg yolks
  • 1 tablespoon of Dijon mustard
  • 400 ml vegetable oil
  • 1 tablespoon of cold water
  • 2 tablespoons of fresh lemon juice
  • Salt and pepper

How to make Belgian Mayonnaise

Prep/Cook Time: 15 minutes

Add the lemon juice, egg yolks, mustard and cold water into a large mixing bowl. Whisk together until thoroughly combined. Then, very slowly, pour in the vegetable oil a drop at a time whisking vigorously after each drop of oil. A hand blender can be used if necessary. Be patient as adding the oil too quickly will make the mayonnaise curdle. Continue adding the oil and whisking until the mixture starts to thicken. If the mixture becomes too thick, add a little extra cold water. 

Stop whisking when the mayonnaise mixture thick, white and creamy. Season with salt and pepper according to taste. You can keep your homemade mayonnaise in a covered container in the fridge. Your Belgian mayonnaise will keep for up to two days.

Don’t forget that if you are planning to leave your raw egg mayonnaise out at room temperature for a meal or buffet, it can only be left out for a maximum of two hours.  Additionally, this Belgian mayonnaise base can also be used to make other sauces. For example, you can make garlic mayonnaise by using olive oil and adding crushed garlic. Or, for an extra spicy kick, add a splash of Tabasco.

What to serve with your Belgian Mayonnaise Recipe

This mayonnaise recipe is perfect for long summer nights with good friends, great food and, of course, heavy beer. Serve as a creamy accompaniment to Steak Tartare, as a refreshing snack mixed with shrimp and stuffed in fresh tomatoes or with canapes such as Classic Deviled Eggs. And, of course, Belgian mayonnaise should always be served with Belgian fries Vlaamse Fries.
