The scoop: Oscar-winning director, winemaker, and hotelier Francis Ford Coppola clearly knows how to enjoy the good things in life. After falling for Belize on a visit in the ‘80s, Coppola snatched up a parcel of land in the northwest corner of the Mountain Pine Ridge Forest Reserve. And there,  in the middle of the rainforest, he erected Blancaneaux Lodge, which served as his private family home until it was converted to a hotel with 20 cabanas and villas overlooking natural waterfalls throughout the property. Coppola’s 2-bedroom villa has its own private plunge pool, an open living room, and a Japanese tub. The resort’s surroundings are rugged, unspoiled, and subject to the elements of Mother Nature, which can occasionally knock out power and wash away roads. The reward, though, is being completely in tune with nature, and enjoying jungle adventures like birdwatching – keep an eye out for the keel-billed toucan, Belize’s national bird – and cave tubing. It’s not hard to see why Coppola fell hard for Belize. In fact, he liked it so much that he acquired additional beach property to build sister resort Turtle Inn in 2001. After all, one good thing is never enough.
